At Capella Hanoi, an exquisite evening was held to celebrate three historical milestones: 120 years of Champagne Salon, 265 years of Champagne Delamotte, and the launch of the special Salon 2015 vintage. This was more than just a party; it was a harmonious blend of the "jewels" of Imperial Caviar and the essence of Champagne Salon, taking place in the high-end culinary setting of Hibana by Koki.
Hibana by Koki is more than just a restaurant; it's a "temple" of precision, discipline, and artistry. Under the masterful hand of Chef Yamaguchi, traditional Kaiseki philosophy is infused with a contemporary and innovative spirit. His culinary foundation, built on respect for seasonality and balance, has become the perfect stage for a poetic dialogue between Champagne Salon vintages and the "black pearls" of Imperial Caviar.
Beyond just food and wine, this event was a tribute to the exquisite craftsmanship, heritage, and sophistication of discerning connoisseurs. For the select few fortunate guests, it was a night where centuries of Champagne expertise, decades of sustainable caviar production, and refined Japanese culinary artistry converged – setting a new standard for luxury experiences in Vietnam.
Led by Grégoire Piochon, Export Director of Salon & Delamotte, guests journeyed through the history, terroir, and craftsmanship of these legendary brands. Each wine pairing revealed a new facet of caviar: from creamy, smooth notes to crisp, pure notes, all enveloped in the refined harmony of Hibana's elegant culinary traditions.
