An evening at the French Grill brought special guests to experience The Grand Indulgence — where the classic beauty of Imperial Caviar Berlin meets the modern creativity of French cuisine under the talented hands of Chef Jean-François Nulli. More than just a dinner, this was an occasion to celebrate the technique, the origin of ingredients and the passion for the highest cuisine.
Amidst the luxurious space of JW Marriott Hanoi, the taste journey begins with a tasting menu designed by Chef Jean-François Nulli, clearly expressing the contemporary style he pursues. Ossetra caviar — with its silky texture, light umami and characteristic depth — is present in each dish not only as the main ingredient, but also as a subtle mark attached to each flavor.
The journey was enhanced by a wine pairing from Maison Louis Jadot and Champagne Charles Mignon, which brought out the layers of flavour. It all made for an evening that was both daring and elegant — cementing Imperial Caviar Berlin’s place among gourmets in Asia.

Set in a luxurious, candlelit setting with soft jazz music, the evening felt both intimate and sumptuous. The carefully curated tasting menu was a symphony of flavors—starting with a journey through three premium caviars from Imperial Caviar Berlin: Beluga, Oscietra and Baeri. This was followed by melt-in-your-mouth Wagyu beef, lightly seared Miyagi scallops and succulent, meaty 5DO Canadian lobster. Each dish was paired with a matching wine, creating an elegant experience.
What made the evening unforgettable was not just the quality of the food, but the rhythm and attention to detail. The Sanriku black cod was perfectly cooked—smooth and melt-in-your-mouth—while the Wagyu Tournedos Rossini was rich and creamy, leaving a lasting impression. The finale was a dessert of Valrhona chocolate and caviar, where contrasting textures and contrasting flavors met in an unexpected, yet luxurious, fusion. This was not only a feast for the senses, but also an evening that made one want to slow down—to savor every moment.
